A lively, young and colourful idea comprising a cascade of cherries covered in a particular cocoa coating, crunchy and reminiscent of the flavour of amaretto, the Italian almond biscuit. The kit includes a ripple made from a cherry paste containing over 60% cherries, and a cocoa, amaretto flavoured coating. PROPORTIONS: 100 g Cherry Mania Paste per kg of white base. The same paste can be used to ripple gelatos as desired. Decorate the gelato with about 40 g of Cioccomania coating.
